Pasta Al Pesto (Linguine with Pesto)

pesto to warm pasta and toss to combine. Serve with additional basil leaves, tomato sauce, and basil oil.

Ingredients

120gm Linguine pasta

20gm Basil

4gm Salt

4gm Pepper

10gm Parmesan cheese

20gm pine nuts

20ml Olive oil

20gm Tomato puree

1gm Garlic

1gm Onion

Preparation

STEP 1

Bring a large pot of water (salted) to a boil. Add pasta to boiling water and cook according to package instructions (usually 7-10 minutes). Drain when al dente and return to pot to keep warm.

STEP 2

Add basil, crushed garlic, pine nuts, olive oil, lemon juice, salt, and pepper, and process until combined but still slightly chunky.

STEP 3

Add pesto to warm pasta and toss to combine. Serve with additional basil leaves, tomato sauce, and basil oil.

STEP 4

Heat the olive oil in a large saucepan, add the onions, and cook on low heat until soft. Add the garlic and tomato purée. Cook for a few minutes then add the chopped tomatoes and oregano. Season generously and simmer for 20 mins, then allow to cool.
